Watermelon Mint Granita

Ingredients:
- 750g watermelon, chopped
- ¼ cup Raw Earth Sweetener
- Juice of 1 lime (approximately 2 tbsp)
- ½ cup fresh mint leaves
Method:
- Combine all ingredients in a high powered blender and blend to a puree.
- Pour into a baking tray, cover with plastic wrap and place in the freezer for six hours or overnight.
- Once completely frozen, scrape the ice with a fork to create flakes.
- Serve immediately as is or with yoghurt or ice cream. If reserving to serve later, return to freezer to keep flaky texture intact.
