Chocolate Mousse Tarts Serves: 12 Prep: 45 minutes Cooking: 25 minutes Ingredients Pastry ½ cup plain flour ¾ cup almond meal ¼ cup cacao powder ¼ cup Raw Earth Sweetener 100g unsalted butter, chilled and cubed 2 tbs thickened cream Filling 100g dark chocolate sugar-free 1 egg 1 egg white ¼ cup Raw Earth 1 tsp vanilla bean paste 150ml thickened cream Method     Combine the flour, almond meal, cacao, Raw Earth and butter in a food processor and pulse until it resembles breadcrumbs.     Add the cream and pulse until it just looks like it will come together. Pour onto the benchtop and bring together quickly with your hands.     Form into a disk and then wrap tightly in plastic before refrigerating for 1 hour.     Make the mousse by melting the dark chocolate in the microwave. Raw Earth Gingerbread Mousse Serves: 5 Prep time: 15 mins Chill time: 30 mins Ingredients ¼ cup cashew/almond butter ½ cup coconut cream, firm* 2 tbs Raw Earth 1 teaspoon vanilla extract 1 tsp ground allspice 2 -3 tsp ground ginger Topping 1 tsp cinnamon 2 tbs almond meal 1 teaspoon Raw Earth Method Combine the nut butter with the Raw Earth in a mixing bowl and beat on high for about 3-5 minutes until light and fluffy. Add the spice and vanilla and continue to beat for another 3 minutes. Cover and place in the fridge for at least 30 minutes To make the topping combine the cinnamon, almond meal and raw earth in a small bowl. When ready to serve sprinkle over the topping. * if your coconut cream is not firm place in the refrigerator for about 45 mins-1 hour.

Peanut Butter Mousse Ingredients ¼ cup natural smooth peanut butter ½ cup coconut cream, solid part* 2 tbs Raw Earth ½ teaspoon cinnamon Method Combine all ingredients in the bowl of an electric mixer. Beat for 5-6 minutes until light and creamy. Serve topped with cacao nibs. Serves 2   -   Prep: 8 Minutes
